Pot Pie

Crust

Ingredients:

  • 2 cups rice flour
  • 1/4 cup coconuts oil
  • 1/2 cup water
  • 1/2 teaspoon salt

Filling

Ingredients:

  • 1 can black beans
  • 1 cup quinoa
  • 1/4 cup raisins
  • 1 cup diced celery/carrots/onion/peppers
  • 1 tablespoon coconut oil
  • 1 pinch cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cooking Instructions:

  1. Prehgeat oven to 400F
  2. Cook Quinoa in a pot of 2 cups of water for 20min on medium low after water has boiled.
  3. Mix crust ingredents togther and set aside
  4. Saute veggies with coconut oil and mix in spices.
  5. Once cooked add quinoa, raisins and black beans to veggies.
  6. Coat a pie mold with coconut oil.
  7. put half the dough evenly around the mold.
  8. Add filling.
  9. Add the rest of the dough evenly on the top of the pie.
  10. Pop in the oven for about 15min until the top is golden brown.
