Creamy Avocado Pasta

Ingredients

  • 8oz (about half a box) of gluten free pasta
  • 1 avocado mashed
  • 1 tablespoon of Himalayan pink salt (for pasta water)
  • 6 cups of boiling water
  • 1 package of spinach
  • 4 cloves of garlic minced
  • 1 tablespoon hemp oil
  • 2 tablespoons tomato paste
  • 1 can of black beans drained
  • 1/8 teaspoon of black pepper ground

Cooking instructions

  1. Boil water and salt for pasta in pot on high heat
  2. Once water boiled add pasta and cook for 6-8min until desired tenderness is reached
  3. Strain pasta leaving a little of the pasta water left in the pot
  4. Heat pan over medium with oil, garlic, tomato paste, and mashed avocado for 5-10min
  5. Strain beans and add to pan
  6. Add pepper, pasta, spinach and just enough of the pasta water to coat the bottom of the pan
  7. Cook for another 5-10min until spinach is cooked down
