Chickpea Pasta

Ingredients:

  • 1 box chickpea pasta
  • 1/4 teaspoon pink salt
  • 2 avocados
  • 2 tomatoes
  • 1 onion
  • 4 shallots
  • 2 cloves garlic
  • 2 tablespoons olive oil

Cooking Instructions:

  1. boil water for pasta and cook for 7-9 minutes
  2. dice onion, shallots, garlic and add into a saute pan to cook with oil ans salt
  3. dice up tomatoes and avocados put to the side
  4. mix pasta with cooked veggies for a couple minutes then add in tomatoes and avocados for just enough time to get them heated

*Grilled or baked asparagus is great on the side.
